Ingedients:
3 pounds chopped meat use 2 or more different kinds: burger, pork, andouille sausage, chorizo, linguicia, steak...
2 tsp steak seasoning whatever you like
0.5 cup chili powder
1 tsp cracked black pepper
4 tsp ground cumin season to taste
2 tsp Maggi seasoning
3 cloves garlic minced
1 Tbsp basil
0.5 cup celery powder I don't care for chopped celery, so I use celery powder
1 cup onion chopped - sweet and purple onions really shine here
0.5 cup pepper flakes red or green pepper flakes
2 each habanero peppers FINELY CHOPPED - remove the seeds if you want to keep the heat down
2 cans chili beans with juice
1 can tomato juice substitute tomato sauce for thicker chili
1 can diced tomatoes
1 can crushed tomatoes
12 oz beef broth
1 cup BBQ sauce your choice - flavor will affect chili so this is to taste
2 Tbsp Kahlua OH YEAH BABY
1 cup bourbon optional
1 bottle dark beer bock beers are excellent in this
2 Tbsp Worcestershire sauce
 
Directions:
  1. In a large pot, combine meat, steak seasoning, chili powder, cumin, black pepper, basil, garlic and mix well. Cook until meat is crusty.
  2. Add celery, onions, peppers and cook until onions are tender - STIR FREQUENTLY.
  3. Deglaze pot with broth and tomato juice. Add remaining ingredients and bring to boil.
  4. Reduce heat and simmer until desired consistency is reached.
