Recipe #9Lard Bread (AKA Prosciutto Bread)

Cook Time: 1 hour
Makes: 1 loaf
 
Comments: Slice and serve warm - add other ingredients as desired, such as granulated onion/garlic or Italian seasoning
 
Ingedients:
2.5 cups all purpose or bread flour 00 flour is desired if available
1 Tbl dry or instant yeast
1 cup warm water
1 tsp sugar
1 Tbl dry or instant yeast
1 cup warm water
1 tsp sugar
1 tsp black pepper ground or cracked - to taste
3 tsp lard or bacon grease melted
1 cup cheese use mix of Romano/Parmesan AND Havarti or Provolone
2 cups meat use blend of prosciutto and Capocollo/ham/salami
 
Directions:
  1. Combine yeast, warm water and sugar - let rest until bubbly
  2. Add remaining ingredients mix until dough comes together
  3. Knead by hand or using dough hook on mixer (on medium) for ten minutes
  4. Dough should be shaggy and sticking to the bottom of the bowl, but if too sticky add 1 tablespoon more flour at a time as needed
  5. Form into ball, oil a large bowl and place dough inside
  6. Cover with damp kitchen towel and let rise in a warm area until doubled in size, about 1 hour
  7. While the dough rises, chop/grate meat and cheese and blend by hand in large bowl
  8. Pound dough into the meat/cheese blend, folding over many times and filling it with blend
  9. Form dough into loaf shape or ring shape as desired
  10. Cover with a tea towel and let rise again, 1 hour
  11. Preheat the oven to 425
  12. Bake for 35-40 minutes, until golden brown
  13. Remove from oven and brush with butter or olive oil
