Makes: 1 - 12" round or 2 - 8" round pans
 
Comments: Basic New York style - but better
 
Ingedients:
2 cups ground Oreos
0.25 cup melted butter
6 eggs
2.25 cups sugar consider sugar substitute like Besti
1 Tbl lemon juice to taste
1 tsp vanilla
1 tsp salt
1.5 cups heavy whipping cream
3 pounds cream cheese softened completely - very soft
 
Directions:
  1. Preheat oven to 350
  2. Pulverise Oreos in blender or food processor
  3. Spread Oreo crumbs into 10 or 12-inch round springform pan
  4. If the Oreo crumbs are too dry, add some melted butter
  5. Bake crust in oven for 10 minutes
  6. Combine eggs, sugar, lemon juice, vanilla, flour and salt into large mixing bowl
  7. Beat mixture until light and fluffy
  8. Add softened cream cheese and cream and beat until fluffy and smooth (5 - 10 minutes)
If using water bath to cook
  1. Pour mixture into springform, wrap springform and set into water bath
  2. Bake at 325 - 350 for 1 hour
If NOT using water bath
  1. Place glass cup of water in oven
  2. Pour mixture into springform
  3. Bake at 300 - 325 for 1 hour
  4. DO NOT open oven door
Bake until middle is semi-firm, but not cracked or brown
